Big Family Baked Oatmeal
One of our favorite budget friendly, big family breakfasts is Baked Oatmeal. It’s simple to make, flexible for dairy, gluten & sugar free and can be made with a variety of fruits for fun flavors.
This yummy crowd pleaser whips up quickly in one bowl and can be made the night before to make things simple in the morning. Fruit (or combinations) can be added to the simple cinnamon & vanilla flavored base recipe such as chopped apple, raisins, cranberries, chopped dates, blueberries, raspberries or even mincemeat! You may even have a fun flavor addition that you family enjoys that you could experiment with using this baked oatmeal recipe.
We enjoy this baked oatmeal awesomeness at least once a month for a Sunday morning breakfast before church. I love how quickly it prepares the night before and that it bakes up quickly in the morning for a simple yet heart warming and tummy filling breakfast. You can save time by just popping it in an unheated oven then turning on the heat to 350 F and leaving it for 40-45 minutes while you get ready for the day. Once it’s cooled slightly it can be cut into 12 or more pieces and served on plates or bowls. We usually do bowls so the kids can add a splash of cold milk (or milk alternative). We don’t do any additional sugar or toppings like on Decorate Your Own Porridge breakfasts so it can be low to no sugar if that’s important or even necessary for your.

Baked Oatmeal
- 4 c large flake oatmeal
- 2/3 c sugar or sweetener
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 2 c milk or alternative
- 4 eggs
- 2 tbsp melted coconut oil
- 1 c optional fruit: raisins, craisins, chopped apple, frozen or fresh blueberries, raspberries, cranberries, mincemeat, chopped dates, etc.
SHORT DIRECTIONS
- Mix all the dry ingredients in a bowl. Add the wet ingredients and mix well. Bake in a greased 9x13 then enjoy!
STEP BY STEP INSTRUCTIONS
- Preheat oven to 350 F.
- Grease a 9 x 13 glass dish and set aside.
- Mix dry ingredients in a large bowl.
- Add wet ingredients and mix until all dry ingredients are incorporated.
- Gently stir in optional additional fruit(s).
- Scrape mixture into greased 9 x 13 dish.
- Cook uncovered in oven for 35 minutes until done.
- Let cool slightly before cutting into portions.
- Serve with splash of cold milk or alternative and enjoy!
