Roasted Potatoes With Sausage & Veggies


Some days I just don't want to cook at all. All inspiration is gone and I'm debating ordering in, but for a family with eleven children that is a luxury we keep to only a few times a year (if that!)

Tasty nutritious meals that that take little to no thinking, can be prepped in ten to fifteen minutes and cook easily are my new best friend.  That's why I love this recipe I just discovered!

This one-and-done recipe brings together three of my favorite things: potatoes, sausages and veggies. All the macronutrient main food groups are covered. Roast them all up together and serve. Super yummy!

This one is so good and so simple. You can make it even more simple by substituting the potatoes for frozen perogies if you like. Sweet potatoes can be be switched or mixed for the carbohydrates.

I meal plan a week in advance to save time, money and stress at the grocery store so I typically use bell peppers or brussel sprouts for the vegetable component, but you can use whatever you like or have on hand such as carrots, broccoli, cauliflower, beans, etc.

For the meat, I like smoked sausages (we call the Smokies in Canada) but you can use a natural nitrate free substitute if you prefer. Kielbasa, chorizo or another meat works.

This one is a crowd pleaser at my big family home  that we now feature once or twice a month. My young adults learning to cook can do this one easily and it cleans up in a jiff.

Roasted Potatoes With Sausage & Veggies

A delicious & versatile blend of roasted potatoes, sausages and vegetables

 
  • 3 pounds white or sweet potatoes
  • 8-10 smoked sausage or alternative
  • 3 bell peppers
  • 1 medium onion
  • 4-5 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)

SHORT DIRECTIONS

  1. Cut and mix everything together, stick it on baking sheets, roast for for 35 minutes. Dinner is served!

STEP BY STEP INSTRUCTIONS

  1. Preheat oven to 425 F.
  2. Rinse and cut unpeeled potatoes into 1 inch cubes. Put into large mixing bowl.
  3. Cut peppers into 1 inch pieces. Add to bowl.
  4. Cut sausages into 1/2 inch rounds. Add to bowl.
  5. Toss ingredients and drizzle oil over all. Mix well.
  6. Prepare two cookie sheets with layer of aluminum foil or silicone sheets.
  7. Spread mixture evenly over both sheets.
  8. Sprinkle spices evenly over mixture.
  9. Cook in oven for 35 minutes or until roasted to your desired preference. Optional: turn once half way.

TIME SAVER TIPS

  1. Prep this the night before and refrigerateUse frozen perogies instead of potatoes.
  2. Use small brussel sprouts or other vegetable(s).
